Roast date matters more than any other number on the bag. Peak flavor runs about 7 to 21 days from that date. Here is how to pull the best cup out of it before the window closes.
THE BREW
Ratio
1:16 (1g coffee to 16g water)
Dose
18g coffee to 300g water, one cup
Grind
Medium-fine, like table salt
Water
Just off the boil, 200 to 205F
Pour
Bloom 45 seconds, then slow pour to 300g
THE STORAGE
Keep the bag in an airtight container, away from light and heat.
Skip the fridge. Moisture and fridge odors wreck the cup.
Drink within three weeks of the roast date for peak flavor.
